Stop by Reflections Restaurant and get one or two or a whole handful!

Students in the MCC restaurant will make and serve Salad a la Mancha with California dates – a tapas-inspired composed salad that was chosen for a national competition. Created by our very own Chef Gerry Brinkman, MCC culinary instructor and owner of the Wellesley Hotel in the Thousand Islands, Salad a la Mancha was picked as a finalist among 12 from across the country to compete this Sunday in the California Date Chef Competition in Indio, Calif. The competition is sponsored by the California Date Administrative Committee.

Gerry’s recipe also is getting press coverage as the Democrat and Chronicle ran a story in its April 23 issue.

In honor of the competition, Gerry and the students will serve the salad from May 2 through the end of the semester. Reflections is open for lunch Monday through Thursday in the Flynn Campus Center.   Last day of operation for the semester is Thursday, May 10th.
