MCC’s Wellness Council Food of the Month for February is Root Vegetables!


Let’s get to the root of it!  Root vegetables are a staple in the winter months and they are in season almost all year.  Root vegetables are some of the most nutrient-dense vegetables in the world.  Because they grow underground, root vegetables absorb a large amount of nutrients from the soil.  They are packed with a high concentration of antioxidants, vitamins C, B, A, and iron.  They are also filled with slow-burning carbohydrates and fiber which can make you feel full and help regulate your blood sugar and digestive system.  Due to their high concentration of nutrients and low calories, root vegetables are an excellent choice for people who are trying to lose weight or are simply trying to stay healthy.

Let’s eat!  Examples of root vegetables are:  yams, beets, parsnips, turnips, rutabagas, carrots, yucca, onions, garlic, celery root, horseradish, daikon, radishes, jicama, turmeric, Jerusalem artichokes, and ginger.

 You don’t need to have a root cellar to enjoy root vegetables.  They are best stored in a cool, dark, humid room.  When storing them in the refrigerator, keep roots in a paper or plastic bag in the crisper. 

How can you eat roots?  Roots are extremely versatile so you can eat them anyway you want!  Eat them raw, steamed, boiled, baked, roasted, sautéed and grilled.  So get to the root of it and discover how you like to eat root vegetables.
