Green Tip: Campus Crunch - Monday October 23

Campus Crunch is a state-wide celebration of local food on college campuses. At MCC we are celebrating by taking a crunchy bite out of a New York State-grown apple to affirm our commitment to food that is healthy for people and for the planet on Monday October 23.

According to the New York Apple Association

  • New York is the second largest apple producing state in the US, averaging 29.5 million bushels annually. 
  • New York grows more apple varieties than any other state. 

Apples are Healthy for YOU! 

  • Apples are cholesterol-free, fat-free, and sodium-free. 
  • Apples help you maintain healthy digestion as one large apple has 5 grams of fiber, including the soluble fiber pectin. The pectin in apples is a prebiotic, providing food for friendly gut bacteria. 
  • Apples help maintain healthy blood sugar. A 2007 study of more than 38,000 women, found that women who ate one or more apples a day had a 28% lower risk of type 2 diabetes compared with those who ate none.   

Apples help the environment: 

  • An acre of apples will extract about 15 tons of carbon dioxide from the air each year while producing 6 tons of oxygen. 
  • Apple trees help absorb excess water when there is a lot of rain, reducing runoff of soil into local waterways. 

Stop by the Marketplace at Brighton or Deja Brew (Brighton and Downtown) to enjoy menu items created with NYS apples. The Sustainability Committee will also have apples at the Sustainability Day event in the Empire Room on 10/23 at noon.
